- Whole garlic cloves
- 1 yellow onion
- 1 cup dry white wine (Sauvignon Blanc)
- 1 cup heavy cream
- Extra virgin olive oil
- Salt and pepper
Instructions
- Preheat your oven to 425°F (220°C) and drizzle olive oil in a roasting pan.
- Pat the whole chicken dry and season generously with salt and pepper inside and out.
- In a bowl, mix chopped herbs, minced garlic, and olive oil; rub this mixture over the chicken.
- Sauté finely chopped onions in olive oil until translucent. Add more minced garlic, then pour in white wine and cream; simmer for 3-5 minutes.
- Place the seasoned chicken breast-side up in the roasting pan, pouring the creamy sauce around it. Roast for about 1 hour and 20 minutes or until golden brown.
