This easy-to-make dish combines tender potatoes, sautéed onions, and fragrant garlic, all blended with heavy cream for a rich and velvety texture. Perfect for chilly nights or as a delightful starter at gatherings, this soup envelops you in cozy flavors that chase away the winter blues. Top it with fresh chives for an added pop of color and taste, making it a hit at your dinner table.

Ingredients

Scale
  • 45 medium potatoes (about 1.5 lbs), peeled and diced
  • 1 medium yellow onion, diced
  • 23 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 2 tablespoons butter
  • Salt & pepper to taste
  • Fresh chives (optional, for garnish)

Instructions

  1. Prep Your Ingredients: Wash and peel the potatoes, then dice them into small cubes. Dice the onion and mince the garlic.
  2. Sauté Aromatics: In a large pot over medium heat, melt the butter. Add the diced onion and cook until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
  3. Add Potatoes and Broth: Add the diced potatoes and vegetable broth to the pot. Bring to a gentle boil, then reduce heat to simmer until potatoes are tender (15-20 minutes).
  4. Purée for Creaminess: Use an immersion blender to blend the soup until smooth or transfer to a blender carefully.
  5. Add Cream & Seasonings: Stir in heavy cream along with salt and pepper to taste. Simmer gently for another 5 minutes.
  6. Garnish & Serve: Ladle into bowls, garnishing with fresh chives if desired.
