- 1 tsp cinnamon
- 2 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and granulated sugar in a bowl until crumbly. Press firmly into the bottom of a 9-inch springform pan.
- Bake crust for 8-10 minutes until golden. Allow to cool.
- In a mixing bowl, beat softened cream cheese with granulated sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing gently.
- In a skillet over medium heat, melt butter; add sliced bananas, brown sugar, and cinnamon. Cook until caramelized (3-4 minutes).
- Fold half of the caramelized bananas into the cheesecake batter and pour over the cooled crust. Top with remaining bananas.
- Bake at 325°F (160°C) for about 55-60 minutes until edges are set but center jiggles slightly. Cool in the oven for an hour before refrigerating for at least four hours or overnight.
