  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted

  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 ripe bananas, sliced
  • ¼ cup dark rum
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and granulated sugar in a bowl until crumbly. Press firmly into the bottom of a 9-inch springform pan.
  2. Bake crust for 8-10 minutes until golden. Allow to cool.
  3. In a mixing bowl, beat softened cream cheese with granulated sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing gently.
  4. In a skillet over medium heat, melt butter; add sliced bananas, brown sugar, and cinnamon. Cook until caramelized (3-4 minutes).
  5. Fold half of the caramelized bananas into the cheesecake batter and pour over the cooled crust. Top with remaining bananas.
  6. Bake at 325°F (160°C) for about 55-60 minutes until edges are set but center jiggles slightly. Cool in the oven for an hour before refrigerating for at least four hours or overnight.
