  • 1 cup green or brown lentils, rinsed
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onions, garlic, carrots, and celery into small pieces.
  2. In a large pot over medium heat, drizzle olive oil. Add onions and sauté until translucent (about 5 minutes).
  3. Add the chicken breasts along with garlic, carrots, and celery. Cook until the chicken is slightly browned (4-5 minutes).
  4. Stir in rinsed lentils and chicken broth. Add dried thyme and bay leaves; mix well.
  5. Bring to a gentle boil then reduce heat to low. Cover and simmer for 30 minutes until lentils are tender.
  6. Remove chicken from the pot; shred or dice it before returning it to the soup. Season with salt and pepper to taste.
