- 2 lbs Russet potatoes
- 2 large yellow onions
- 1 cup heavy cream
- 1.5 cups shredded Gruyère cheese
- 4 tablespoons unsalted butter

Instructions
- Preheat your oven to 375°F (190°C).
- Thinly slice the Russet potatoes and yellow onions to about 1/8-inch thickness.
- In a skillet, melt the butter over medium heat. Add sliced onions and cook until golden brown, about 15 minutes.
- In a bowl, whisk together heavy cream, salt, pepper, and fresh thyme.
- In a greased baking dish, layer half the potato slices followed by half the sautéed onions. Pour half of the cream mixture over this layer and repeat.
- Top with shredded Gruyère cheese and bake uncovered for 45 minutes until bubbly and golden.
