  • 2 lbs Russet potatoes
  • 2 large yellow onions
  • 1 cup heavy cream
  • 1.5 cups shredded Gruyère cheese
  • 4 tablespoons unsalted butter
  • Fresh thyme (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thinly slice the Russet potatoes and yellow onions to about 1/8-inch thickness.
  3. In a skillet, melt the butter over medium heat. Add sliced onions and cook until golden brown, about 15 minutes.
  4. In a bowl, whisk together heavy cream, salt, pepper, and fresh thyme.
  5. In a greased baking dish, layer half the potato slices followed by half the sautéed onions. Pour half of the cream mixture over this layer and repeat.
  6. Top with shredded Gruyère cheese and bake uncovered for 45 minutes until bubbly and golden.
