Ingredients

  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, pitted
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped (or mint)
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and 2 cups water. Bring to a boil, then reduce heat and simmer until water is absorbed (about 15 minutes).
  2. While quinoa cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, and slice red onion.
  3. In a large bowl, mix cooked quinoa with diced veggies. Toss gently to combine.
  4. Top with crumbled feta cheese and Kalamata olives. Drizzle with lemon juice and olive oil; season with salt and pepper.
  5. Toss everything together until well mixed. Garnish with chopped parsley or mint before serving.
