  • 2 tsp olive oil
  • 2 tbsp Southwest seasoning blend (cumin, paprika, chili powder)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup fresh corn (cooked or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 2 tbsp lime juice
  • ΒΌ cup chopped cilantro (optional)

Instructions

  1. Preheat skillet over medium-high heat and drizzle in olive oil.
  2. Season the chicken breasts with the Southwest seasoning blend.
  3. Sear the chicken in the skillet for about 6-7 minutes per side until golden brown and cooked through. Let it rest before slicing.
  4. In the same skillet, add black beans and corn; stir until warmed through (approximately 3-4 minutes).
  5. Slice the rested chicken and layer it over black beans and corn in bowls.
  6. Top with cherry tomatoes, avocado slices, and a drizzle of lime juice.
  7. Garnish with cilantro if desired. Serve immediately.
