  • 1 cup breadcrumbs (plain or seasoned)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 egg (or flax egg for vegan option)
  • 1 ripe avocado, sliced
  • ½ cup salsa (homemade or store-bought)
  • 4 whole-grain or gluten-free buns

Instructions

  1. In a large bowl, mash the black beans until mostly smooth but slightly chunky.
  2. Sauté the chopped onion and minced garlic in a skillet over medium heat until golden brown.
  3. Combine sautéed onion and garlic with mashed beans, breadcrumbs, cumin, chili powder, and egg; mix well to form a thick mixture.
  4. Shape the mixture into four patties about ¾ inch thick.
  5. Heat a non-stick skillet or grill over medium-high heat; lightly grease it. Cook each patty for 4-5 minutes per side until crispy on the outside.
