- 1 can (15 oz) chickpeas, rinsed and drained
- 1/4 cup mayonnaise (or vegan mayo)
- 1 tbsp Dijon mustard
- 2 celery stalks, finely chopped
- 1/4 cup red onion, diced
- 2 tbsp fresh dill or parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas thoroughly.
- In a mixing bowl, mash half of the chickpeas with a fork or potato masher until chunky.
- Add mayonnaise, Dijon mustard, celery, red onion, herbs, lemon juice, salt, and pepper. Mix until well combined.
- Taste and adjust seasoning as needed.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
