  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Pat chicken breasts dry; season both sides generously with salt and pepper.
  3. In one bowl, whisk eggs until frothy. In another bowl, combine panko breadcrumbs with half the grated Parmesan.
  4. Dip each chicken breast into the egg mixture, then coat thoroughly with the breadcrumb mixture, pressing firmly.
  5. Heat olive oil in a skillet over medium-high heat. Sear each chicken breast until golden brown, about 4-5 minutes per side.
  6. Transfer seared chicken to the baking dish; top with marinara sauce, mozzarella, and remaining Parmesan.
  7. Bake for 20-25 minutes or until cheese is bubbly and chicken reaches an internal temperature of 165°F.
