- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic
- 1 cup panko breadcrumbs
- 2 large eggs
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ¼ cup olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
- Pat chicken breasts dry; season both sides generously with salt and pepper.
- In one bowl, whisk eggs until frothy. In another bowl, combine panko breadcrumbs with half the grated Parmesan.
- Dip each chicken breast into the egg mixture, then coat thoroughly with the breadcrumb mixture, pressing firmly.
- Heat olive oil in a skillet over medium-high heat. Sear each chicken breast until golden brown, about 4-5 minutes per side.
- Transfer seared chicken to the baking dish; top with marinara sauce, mozzarella, and remaining Parmesan.
- Bake for 20-25 minutes or until cheese is bubbly and chicken reaches an internal temperature of 165°F.
