Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 1 medium sweet onion, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (mix of red and green), chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can kidney or black beans, drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium beef broth
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onions and bell peppers and mincing the garlic.
  2. Heat olive oil in a large pot over medium heat. Add onions and bell peppers; sauté for about 5 minutes until soft.

  4. Stir in chili powder, cumin, and garlic; cook for an additional minute until fragrant.
  5. Add diced tomatoes and drained beans; stir to combine.
  6. Pour in beef broth to cover ingredients well. Bring to a boil, then reduce heat to low and simmer uncovered for 30-40 minutes.
