  • 1 lb lean ground beef or turkey
  • 1 cup cooked brown rice
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup bell peppers, chopped
  • 1 cup mixed vegetables (corn or carrots)
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup grated cheese (cheddar or mozzarella)

Instructions

  1. Preheat your oven to 350°F (175°C). Slice off the top of the pumpkin and scoop out the seeds and stringy bits.
  2. In a skillet over medium heat, heat olive oil. Sauté onions and garlic until translucent (about 5 minutes).
  3. Add ground meat and bell peppers to the skillet; cook until browned (7-10 minutes).
  4. Stir in cooked rice, mixed vegetables, cumin, thyme, salt, and pepper until well combined.
  5. Fill the hollowed pumpkin with the mixture. Top with grated cheese if desired.
  6. Place on a baking sheet, cover loosely with foil, and bake for about 60 minutes or until tender.
