- 1 tsp Dijon mustard

Instructions

- Toss the sweet potato cubes in 2 tablespoons of olive oil, salt, and pepper until well coated. Spread them evenly on the baking sheet.
- Roast for 25-30 minutes or until golden brown and fork-tender.
- In a bowl, whisk together the orange juice, Dijon mustard, honey, salt, pepper, and the remaining tablespoon of olive oil until emulsified.
