  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 4 cups mixed greens (arugula and spinach)
  • 1/2 small red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh orange juice
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato cubes in 2 tablespoons of olive oil, salt, and pepper until well coated. Spread them evenly on the baking sheet.
  3. Roast for 25-30 minutes or until golden brown and fork-tender.
  4. In a bowl, whisk together the orange juice, Dijon mustard, honey, salt, pepper, and the remaining tablespoon of olive oil until emulsified.
  5. In a large mixing bowl, combine roasted sweet potatoes with mixed greens and red onion slices. Drizzle with vinaigrette and toss gently to coat.
  6. Top with crumbled feta cheese before serving.
