Ingredients
- Chocolate cookie crust
- Mascarpone cheese
- Powdered sugar
- Heavy whipping cream
- Green food coloring
- Mint extract
- Chocolate chips
Instructions
- Crush chocolate cookies and mix with melted butter to form the crust. Press into a 9×13 inch baking dish evenly.
- In a bowl, combine mascarpone cheese and powdered sugar until smooth. Add mint extract and green food coloring to achieve desired color.
- Whip heavy cream until stiff peaks form, then gently fold into the mascarpone mixture.
- Spread half of the filling over the crust, sprinkle with half of the chocolate chips, layer again with cookie crumbs, and then add more filling.
- Top with remaining filling and dust with cocoa powder or additional chocolate chips. Refrigerate for at least four hours or overnight before serving.
