  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup whole milk
  • 2 Earl Grey tea bags
  • 2 tsp pure vanilla extract
  • 1 cup powdered sugar (for frosting)
  • 1/2 cup heavy cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a small saucepan, warm the whole milk over medium heat until steaming. Add the Earl Grey tea bags and steep for 5 minutes, then remove tea bags.
  3. In a large bowl, whisk together the cake flour, baking powder, and granulated sugar.
  4. In another bowl, cream the softened butter until smooth. Gradually mix in the dry ingredients along with the infused milk until just combined.
  5. Beat in the eggs one at a time and add vanilla extract until smooth.
  6. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool in pans for 10 minutes before transferring to wire racks. Whip heavy cream with powdered sugar to create frosting.
  8. Frost between layers and on top once cooled completely.
