  • 1 lb lean ground chicken
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 medium red onion, diced
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 cups cooked quinoa or rice
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp paprika

Instructions

  1. Prepare all ingredients by chopping vegetables and crumbling feta cheese.
  2. In a large skillet over medium heat, heat olive oil until shimmering. Add ground chicken and garlic; cook until browned.
  3. Stir in diced red onion and sauté for 3-4 minutes until translucent.
  4. Add oregano and paprika; mix well and cook until fragrant.
  5. Remove from heat and squeeze lemon juice over the chicken mixture.
  6. Assemble bowls with quinoa or rice at the base, topped with the chicken mixture, cucumber, cherry tomatoes, feta cheese, and parsley.
