- 2 cups water
- 2 medium sweet potatoes (cubed)
- 1 can (15 oz) chickpeas (drained and rinsed)
- 4 cups fresh kale (chopped)
- 1 ripe avocado (sliced)
- 1 cup cherry tomatoes (halved)
- 3 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss cubed sweet potatoes and chickpeas in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
- In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
- Sauté kale in olive oil over medium heat for about 3–4 minutes until wilted; season with salt.
- Assemble bowls by layering quinoa, roasted sweet potatoes, chickpeas, sautéed kale, avocado slices, and cherry tomatoes.
- Finish with a squeeze of lemon juice and extra olive oil if desired.
