Ingredients

  • 1 cup quinoa (rinsed)
  • 2 cups water
  • 2 medium sweet potatoes (cubed)
  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 4 cups fresh kale (chopped)
  • 1 ripe avocado (sliced)
  • 1 cup cherry tomatoes (halved)
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed sweet potatoes and chickpeas in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  3. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
  4. Sauté kale in olive oil over medium heat for about 3–4 minutes until wilted; season with salt.
  5. Assemble bowls by layering quinoa, roasted sweet potatoes, chickpeas, sautéed kale, avocado slices, and cherry tomatoes.
  6. Finish with a squeeze of lemon juice and extra olive oil if desired.
