- 1/2 cup mini chocolate chips
- 1 cup powdered sugar (for dusting)
- 1/2 tsp cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- In a separate bowl, sift together flour, baking powder, and cinnamon (if using). Gradually add this to the butter-sugar mixture while mixing continuously.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them about two inches apart. Flatten slightly.
- Bake for 12-15 minutes until lightly golden around the edges. Let cool completely.
- In another bowl, mix ricotta cheese with powdered sugar until smooth; stir in mini chocolate chips.
- Once cookies are cooled, spread or pipe filling between two cookies and dust with powdered sugar before serving.
