  • 1 pound lean ground turkey
  • 4 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (red or green)
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • Fresh cilantro (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onions in olive oil until translucent. Add ground turkey, cumin, and chili powder; cook until browned.
  3. Stir in bell peppers and half of the enchilada sauce; simmer for 5 minutes.
  4. Spread some sauce on the bottom of a baking dish. Fill each tortilla with the turkey mixture and cheese, roll tightly, and place seam-side down in the dish.
  5. Pour remaining sauce over enchiladas, sprinkle with leftover cheese, and bake for 25-30 minutes until bubbly and golden brown.
  6. Garnish with cilantro before serving.
