  • 1 cup long-grain white rice
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup salsa (fresh or jarred)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup shredded sharp cheddar cheese
  • 1 ripe avocado (diced)
  • ¼ cup fresh cilantro (chopped)
  • Juice of 1 lime
  • ½ cup sour cream (optional)

Instructions

  1. In a saucepan, combine 1 cup of long-grain white rice with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 18 minutes until cooked.
  2. In a skillet over medium-high heat, brown 1 pound of lean ground beef until fully cooked, breaking it apart with a spatula.
  3. Stir in 2 tablespoons of taco seasoning and mix in the drained black beans until heated through.
  4. Spoon cooked rice into bowls and top with the beef mixture, salsa, cheddar cheese, diced avocado, and chopped cilantro.
  5. Squeeze fresh lime juice over each bowl and add optional sour cream if desired.
