  • 1 lb lean ground beef
  • 1 packet taco seasoning (about 2 tbsp)
  • 1 cup salsa
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup breadcrumbs (preferably panko)
  • 1 large egg
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with non-stick spray.
  2. In a skillet over medium heat, sauté the diced onions and bell peppers until soft, about 5 minutes.
  3. In a large bowl, mix the ground beef, sautéed vegetables, taco seasoning, salsa, half of the shredded cheese, breadcrumbs, and egg until just combined.
  4. Shape the mixture into a loaf in the prepared pan and top with remaining cheese.
  5. Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Allow it to cool slightly before slicing.
