Instructions
- While thawing the chicken, dice the onion and mince the garlic.
- Heat olive oil in a skillet over medium-high heat; sear the chicken until golden brown (about 5 minutes per side).
- Add onions and garlic; sauté until fragrant (about 3 minutes).
- Pour in the chicken broth; bring to a simmer. Stir in rinsed rice until coated.
- Add heavy cream; mix well and let simmer covered on low heat for 20-25 minutes until rice absorbs liquid and the chicken reaches an internal temperature of 165°F.
