Description

Smothered Chicken and Rice is a comforting one-pot meal that combines tender chicken, creamy gravy, and fluffy rice, making it perfect for family dinners any night of the week.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 1 cup long-grain white or jasmine rice (rinsed)
  • 1 cup heavy cream
  • Seasonings: salt, pepper, paprika

Instructions

  1. While thawing the chicken, dice the onion and mince the garlic.
  2. Heat olive oil in a skillet over medium-high heat; sear the chicken until golden brown (about 5 minutes per side).
  3. Add onions and garlic; sauté until fragrant (about 3 minutes).
  4. Pour in the chicken broth; bring to a simmer. Stir in rinsed rice until coated.
  5. Add heavy cream; mix well and let simmer covered on low heat for 20-25 minutes until rice absorbs liquid and the chicken reaches an internal temperature of 165°F.
