  • 1 cup heavy cream (or half-and-half)
  • 2 cups sharp cheddar cheese, shredded
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tbsp butter, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes using a sharp knife or mandoline.
  3. In a bowl, whisk together heavy cream, minced garlic, salt, pepper, and thyme until well combined.
  4. Grease a baking dish with butter. Layer half of the sweet potato slices at the bottom, pour half of the creamy mixture over them, and sprinkle with one cup of cheddar cheese.
