  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add bite-sized chicken pieces seasoned with salt and pepper; cook until golden brown (5–7 minutes). Remove and set aside.
  2. In the same skillet, sauté minced garlic and halved cherry tomatoes for 2 minutes until fragrant.
  3. Pour in chicken broth and dried Italian herbs, bringing to a simmer. Add orzo pasta and stir to combine. Cook for about 10 minutes until orzo is tender.
  4. Stir in fresh spinach until wilted, then mix in Parmesan cheese until melted. Serve hot, drizzled with additional olive oil if desired.
