- 3–4 boneless skinless chicken breasts
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 3 garlic cloves, minced
- 2 cups low-sodium chicken broth
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add bite-sized chicken pieces seasoned with salt and pepper; cook until golden brown (5–7 minutes). Remove and set aside.
- In the same skillet, sauté minced garlic and halved cherry tomatoes for 2 minutes until fragrant.
- Pour in chicken broth and dried Italian herbs, bringing to a simmer. Add orzo pasta and stir to combine. Cook for about 10 minutes until orzo is tender.
- Stir in fresh spinach until wilted, then mix in Parmesan cheese until melted. Serve hot, drizzled with additional olive oil if desired.
