Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, chopped onion, minced garlic, crumbled feta, dried oregano, lemon zest, salt, and pepper. Mix until just combined.
  3. Using damp hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for about 20 minutes until golden brown and cooked through.
  5. Meanwhile, cook orzo in salted water according to package instructions; drain and set aside.
  6. In a saucepan, combine cooked orzo with chicken broth and lemon juice. Stir in olive oil and season with salt and pepper to taste.
