  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 cup melted butter (cooled)
  • 1 cup fresh cranberries (or thawed frozen cranberries)
  • Zest of 1 orange
  • 1/4 cup fresh orange juice

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with grease or paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In another bowl, mix milk, eggs, melted butter, orange juice, and zest until blended.
  4. Gently fold the cranberries into the wet mixture.
  5. Pour the wet ingredients into the dry mix and combine until just mixed; lumps are okay.
  6. Fill muffin cups three-quarters full and bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
