Ingredients

  • Lean ground beef
  • Canned corn
  • Canned black beans
  • Diced tomatoes
  • Bell peppers
  • Shredded cheese (cheddar & Monterey Jack)
  • Jiffy corn muffin mix
  • Eggs
  • Milk
  • Chili powder and cumin

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet, brown the ground beef over medium heat; drain fat. Add diced bell peppers and cook until softened.
  3. Stir in drained corn, rinsed black beans, diced tomatoes, chili powder, cumin, salt, and pepper; cook until heated through.
  4. In a bowl, combine Jiffy corn muffin mix with eggs and milk until just mixed.
  5. Spread the meat mixture in the baking dish, pour cornbread batter on top without mixing layers. Sprinkle shredded cheese over the cornbread batter.
  6. Bake for 25-30 minutes until golden brown on top. Let cool slightly before serving.
