- Jiffy corn muffin mix
- Eggs
- Milk
- Chili powder and cumin
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- In a skillet, brown the ground beef over medium heat; drain fat. Add diced bell peppers and cook until softened.
- Stir in drained corn, rinsed black beans, diced tomatoes, chili powder, cumin, salt, and pepper; cook until heated through.
- In a bowl, combine Jiffy corn muffin mix with eggs and milk until just mixed.
- Spread the meat mixture in the baking dish, pour cornbread batter on top without mixing layers. Sprinkle shredded cheese over the cornbread batter.
- Bake for 25-30 minutes until golden brown on top. Let cool slightly before serving.
