- 3–4 boneless, skinless chicken breasts
- 1 can black beans (rinsed)
- 1 cup frozen corn
- 1 can diced tomatoes
- 2 tbsp taco seasoning
- 4 cups low-sodium chicken broth
- 1 onion (chopped)
- 2 garlic cloves (minced)
- Fresh cilantro (optional)
Instructions
- Sauté chopped onion in a large pot over medium heat until translucent, about 3-4 minutes. Add minced garlic and cook until fragrant.
- Add chicken breasts, diced tomatoes, black beans, corn, chicken broth, and taco seasoning. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
- Remove chicken, shred it using two forks, and return it to the pot.
- Serve in bowls garnished with fresh cilantro and lime juice.
