Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 can black beans (rinsed)
  • 1 cup frozen corn
  • 1 can diced tomatoes
  • 2 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • Fresh cilantro (optional)

Instructions

  1. Sauté chopped onion in a large pot over medium heat until translucent, about 3-4 minutes. Add minced garlic and cook until fragrant.
  2. Add chicken breasts, diced tomatoes, black beans, corn, chicken broth, and taco seasoning. Stir to combine.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
  4. Remove chicken, shred it using two forks, and return it to the pot.
  5. Serve in bowls garnished with fresh cilantro and lime juice.
