- 3–4 boneless, skinless chicken breasts
- 4 cups fresh baby spinach
- 8 ounces fettuccine pasta
- 2 cloves garlic, minced
- 8 ounces cream cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Chop chicken into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook for about 6-7 minutes until golden brown.
- Stir in minced garlic and fresh spinach until wilted, about 1-2 minutes.
- Lower heat and gradually add softened cream cheese while stirring until melted. If too thick, add reserved pasta water to adjust consistency.
- Cook fettuccine according to package instructions. Drain and mix with the chicken-spinach mixture in the skillet until evenly coated.
- Sprinkle grated Parmesan over the dish before serving hot.
