  • 1 lb lean ground beef
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce
  • 1 medium onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/4 cup fresh cilantro, chopped
  • 1 cup sour cream
  • 1/2 cup sliced jalapeños (optional)
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until crumbled. Add chopped onions and cook until translucent.
  3. Stir in cumin, chili powder, and black beans; heat through for 5 minutes.
  4. Spread some enchilada sauce on the bottom of a baking dish. Fill each tortilla with the beef mixture and cheese, then roll tightly.
  5. Place rolled tortillas seam-side down in the dish. Pour remaining sauce over them and sprinkle with additional cheese.
  6. Bake uncovered for 20-25 minutes until bubbly and golden brown.
