- 1 cup rolled oats
- 1 cup all-purpose flour (or whole wheat)
- 2 tsp baking powder
- 2 large eggs
- 1/3 cup honey or maple syrup

- 1 tsp cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mash the ripe bananas until smooth.
- In another bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
- Combine the dry ingredients with the mashed bananas, then add eggs, honey (or maple syrup), and milk until just mixed.
- Fill muffin cups about two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for five minutes before transferring to a wire rack.
