  • 4 medium zucchinis
  • 1 lb lean ground turkey or beef
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 small onion, diced
  • 1 cup tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the insides to create boats.
  2. In a skillet over medium heat, add olive oil and sauté onions until translucent (about 5 minutes).
  3. Add ground meat and minced garlic; cook until browned (8-10 minutes), stirring occasionally.
  4. Remove from heat and mix in feta cheese, parsley, and basil.
  5. Fill each zucchini boat with the meat mixture and place in a baking dish covered with tomato sauce.
  6. Bake uncovered for 25-30 minutes until zucchinis are tender yet firm.
