  • 1 cup buttermilk (or milk + vinegar)
  • 1 cup unsalted butter (softened)
  • 1 cup toasted pecans (chopped)
  • 1 cup sweetened shredded coconut
  • 2 tsp pure vanilla extract
  • 1 can (12 oz) evaporated milk
  • 1 cup packed brown sugar
  • 1/2 cup salted butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in buttermilk and vanilla until combined.
  5. Divide the batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Let cool.
  6. For frosting, combine evaporated milk, brown sugar, butter, egg yolks, and vanilla in a saucepan over medium heat. Stir until thickened (about 10 minutes). Mix in pecans and coconut. Let cool before spreading on cooled cakes.
