  • 4 large eggs, separated
  • ½ cup granulated sugar
  • 1 cup heavy cream, chilled

  • 2 tbsp unsweetened cocoa powder, sifted
  • 1 tsp pure vanilla extract
  • 2 tbsp powdered sugar

Instructions

  2. Melt the dark chocolate in a heatproof bowl over simmering water until smooth.

  5. Gently fold the melted chocolate into the egg mixture, then fold in the whipped cream until well combined.
  6. Carefully add fresh raspberries to the mousse mixture.
  7. Pour the mousse into the prepared cake pan and refrigerate for at least four hours or until set.
