Ingredients

  • 2 cups cauliflower florets (fresh or frozen)
  • 1 cup shredded whole milk mozzarella cheese
  • 1 large egg
  • 1/2 cup pepperoni slices
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Steam or microwave the cauliflower until tender, then pulse in a food processor until it resembles rice.
  3. In a bowl, mix the cauliflower rice with mozzarella, egg, Italian seasoning, salt, and pepper until well combined.
  4. Form small balls of the mixture and place them on the prepared baking sheet; lightly flatten each ball.
  5. Top each bite with one or two slices of pepperoni.
  6. Bake for 20-25 minutes or until golden brown and crispy outside.
