  • 2 medium zucchinis (about 300g)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup seasoned breadcrumbs
  • Zest of 1 lemon
  • Salt and pepper to taste
  • For Basil Aioli: 1/2 cup mayonnaise
  • 1/4 cup fresh basil leaves, chopped
  • 1 clove garlic, minced
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. Slice the zucchinis into thin rounds (about 1/8 inch thick).
  3. In a large bowl, toss zucchini slices with olive oil, lemon zest, salt, pepper, and Parmesan until well coated.
  4. Dredge zucchini in seasoned breadcrumbs until fully covered.
  5. Arrange coated zucchini on baking sheets in a single layer; bake for 20-25 minutes or until golden brown and crispy.
  6. While chips bake, mix together mayo, basil, garlic, lemon juice, salt, and pepper for aioli.
  7. Allow chips to cool slightly before serving with basil aioli.
