  • 1 medium head cauliflower, cut into bite-sized florets
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil (canola or peanut)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar (unseasoned)
  • 2 tbsp brown sugar (dark preferred)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 green onions, finely sliced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets in cornstarch until well-coated.
  3. Spread coated florets on a parchment-lined baking sheet and bake for 25-30 minutes until golden and crispy.
  4. Meanwhile, combine soy sauce, rice vinegar, brown sugar, garlic, ginger, and red pepper flakes in a saucepan over medium heat. Stir until combined and simmer until slightly thickened.
  5. Once baked, toss the crispy cauliflower in the sauce until evenly coated.
  6. Serve on a platter garnished with green onions.
