  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (mix of colors)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 tbsp taco seasoning
  • 1 cup heavy cream or sour cream
  • 1 cup shredded sharp cheddar cheese
  • Fresh cilantro (optional)

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onions until soft and translucent.
  2. Add ground beef or turkey to the pot. Cook until browned, breaking it apart with a wooden spoon (about 4-5 minutes).
  3. Stir in minced garlic, diced bell peppers, taco seasoning, black beans, corn, and diced tomatoes. Cook for another 3-4 minutes.
  4. Slowly mix in heavy cream or sour cream until fully blended. Bring to a gentle simmer.
