  • 2 cups sweet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Peel and cube the sweet potatoes for even cooking. Dice the onion and mince the garlic.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic, sweet potatoes, cumin, ginger, and nutmeg; cook for an additional 1-2 minutes until fragrant.
  4. Pour in vegetable broth to cover the vegetables completely. Bring to a boil then reduce heat to simmer for about 20 minutes until sweet potatoes are tender.
  5. Blend the soup using an immersion blender until smooth. If using a traditional blender, blend in batches, being cautious as it will be hot.
  6. Stir in coconut milk and heat through on low for another 5 minutes. Adjust seasoning with salt and pepper as needed.
