Ingredients
Scale
- 2 cups sweet potatoes, peeled and cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup full-fat coconut milk
- 2 tsp olive oil
- 1 tsp ground cumin
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- Salt and pepper to taste
Instructions
- Peel and cube the sweet potatoes for even cooking. Dice the onion and mince the garlic.
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic, sweet potatoes, cumin, ginger, and nutmeg; cook for an additional 1-2 minutes until fragrant.
- Pour in vegetable broth to cover the vegetables completely. Bring to a boil then reduce heat to simmer for about 20 minutes until sweet potatoes are tender.
- Blend the soup using an immersion blender until smooth. If using a traditional blender, blend in batches, being cautious as it will be hot.
- Stir in coconut milk and heat through on low for another 5 minutes. Adjust seasoning with salt and pepper as needed.
