  • 2 lbs Russet potatoes, peeled and thinly sliced
  • 1 cup pure pumpkin puree
  • 1 cup heavy cream (or half-and-half)
  • 1 ½ cups sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • ½ tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with cooking spray.
  2. Peel and slice the potatoes into uniform 1/8-inch thick rounds.
  3. In a skillet over medium heat, melt butter and sauté diced onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  4. In a bowl, mix pumpkin puree, heavy cream, sautéed onions and garlic, nutmeg, salt, and pepper until smooth.
  5. Layer half of the potato slices in the baking dish; pour half of the pumpkin sauce over them and sprinkle with some cheddar cheese. Repeat with remaining potatoes, sauce, and cheese on top.
  6. Cover with foil and bake for 45 minutes or until tender when pierced with a fork. Remove foil and bake uncovered for an additional 15-20 minutes until golden brown. Allow to rest for 10 minutes before serving.
