- 2 lbs Russet potatoes, peeled and thinly sliced
- 1 cup pure pumpkin puree
- 1 cup heavy cream (or half-and-half)
- 1 ½ cups sharp cheddar cheese, shredded
- 1 medium onion, diced
- 3 cloves garlic, minced
- ½ tsp nutmeg
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish with cooking spray.
- Peel and slice the potatoes into uniform 1/8-inch thick rounds.
- In a skillet over medium heat, melt butter and sauté diced onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
- In a bowl, mix pumpkin puree, heavy cream, sautéed onions and garlic, nutmeg, salt, and pepper until smooth.
- Layer half of the potato slices in the baking dish; pour half of the pumpkin sauce over them and sprinkle with some cheddar cheese. Repeat with remaining potatoes, sauce, and cheese on top.
- Cover with foil and bake for 45 minutes or until tender when pierced with a fork. Remove foil and bake uncovered for an additional 15-20 minutes until golden brown. Allow to rest for 10 minutes before serving.
