  • 4 tbsp unsalted butter, melted
  • 8 oz feta cheese, crumbled
  • 8 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers and melted butter until moistened. Press the mixture firmly into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese and crumbled feta until creamy. Gradually add sugar and vanilla extract, mixing well.
  3. Incorporate eggs one at a time, ensuring each is blended before adding the next. Stir in fresh lemon juice.
  4. Pour the filling over the crust in the springform pan and smooth the top with a spatula.
  5. Bake for 45–50 minutes or until set but slightly jiggly in the center. Turn off the oven and let cool inside with the door ajar for about an hour.
