  • 8 oz fettuccine or penne pasta
  • 1 cup sun-dried tomatoes (packed in oil)
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and bring a large pot of salted water to boil.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat; cook chicken until golden brown, about 6-7 minutes per side. Remove from skillet and let rest.
  3. Cook pasta according to package instructions until al dente.
  4. In the same skillet, sauté minced garlic until fragrant. Add heavy cream, sun-dried tomatoes, and Parmesan; stir until smooth.
  5. Incorporate fresh spinach until wilted. Slice chicken and combine it with the cooked pasta in the skillet; toss to coat evenly.
