Ingredients

  • 1 medium head cauliflower, chopped (about 4 cups)
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup unsweetened full-fat coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop cauliflower into florets. Dice onion and mince garlic.
  2. In a large pot over medium heat, warm olive oil. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  3. Stir in cauliflower florets and cook for 3-4 minutes.
  4. Add vegetable broth to cover the vegetables completely and bring to a simmer for about 15 minutes until cauliflower is tender.
  5. Pour in coconut milk and blend until smooth using an immersion blender or regular blender.
  6. Season with salt and pepper to taste and serve warm, garnished with fresh herbs if desired.
