  • 8 oz Boursin cheese (garlic & herb)
  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • ¼ cup fresh parsley or basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the Orzo: Boil salted water in a large pot. Add orzo and cook until al dente. Drain and set aside.
  2. Sauté the Chicken: Heat olive oil in a skillet over medium heat. Season chicken and cook until golden brown, about 6-7 minutes per side. Remove from skillet.
  3. Add Garlic & Broth: In the same skillet, sauté minced garlic until fragrant. Pour in chicken broth and bring to a simmer.
  4. Melt Boursin Cheese: Reduce heat and stir in Boursin cheese until melted into a creamy sauce.
  5. Combine: Slice chicken and add back to the skillet with drained orzo. Mix well to coat everything in the sauce.
