Ingredients

Scale
  • 6 large hard-boiled eggs
  • 1 ripe avocado
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp paprika (sweet or smoked)
  • Salt and pepper to taste
  • Fresh herbs (chives or cilantro) for garnish

Instructions

  1. Boil the Eggs: Place eggs in a pot filled with cold water. Bring to a boil over medium heat. Cover and remove from heat; let sit for 12 minutes. Transfer eggs to an ice bath for easy peeling.
  2. Peel the Eggs: Gently tap each egg on the counter until cracked all over. Roll it between your hands to loosen the shell and peel under running water.
  3. Prepare the Filling: Slice peeled eggs in half lengthwise; scoop yolks into a mixing bowl. Add avocado, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mash until smooth and creamy.
  4. Add Seasoning: Stir in paprika and adjust seasoning as needed.
  5. Fill the Egg Whites: Spoon or pipe the avocado mixture back into egg whites. Garnish with additional paprika or fresh herbs.
  6. Serve & Enjoy: Arrange on a platter and serve chilled or at room temperature.
