Description

Ingredients

  • 4 cups carrots, peeled and chopped
  • 1 cup onion, chopped (about 1 medium onion)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by peeling and chopping the carrots, dicing the onion, and mincing the garlic.
  2. Add all ingredients into the slow cooker: carrots, onion, garlic, ginger, vegetable broth, coconut milk, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. Once done cooking, blend until smooth using an immersion blender or regular blender.
  5. Stir in lime juice before serving and adjust seasoning if necessary. Serve garnished with fresh herbs or croutons.
