  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 1 cup elbow macaroni (optional)
  • 2 cups fresh spinach or kale

Instructions

  1. Gather all ingredients and preheat a large pot over medium heat.
  2. Add 2 tsp olive oil to the pot. Sauté the onions, garlic, carrots, and celery until the onions are translucent.
  3. In a bowl, mix ground turkey with breadcrumbs, egg, Italian seasoning, salt, and pepper. Roll into small meatballs (about one inch).
  4. Pour chicken broth and diced tomatoes into the pot; bring to a gentle simmer. Add mini meatballs, carrots, and celery.
  5. Simmer on low heat for about 20 minutes until meatballs are cooked through. Stir occasionally.
  6. If using pasta, add it along with spinach or kale during the last 5-7 minutes of cooking.
  7. Taste and adjust seasoning if necessary before serving.
