- 1 medium onion, diced
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin seeds
- Salt and pepper to taste
- 2 cups vegetable broth or water
Instructions
- Prep vegetables: Wash and chop cauliflower into florets; dice onion; mince garlic; grate ginger.
- Sauté aromatics: Set Instant Pot to sauté mode. Add oil and sauté onion until translucent (3-4 minutes). Add garlic and ginger; sauté for another minute until fragrant.
- Add main ingredients: Stir in cauliflower florets, curry powder, turmeric, cumin seeds, salt, and pepper until evenly coated.
