- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup orzo pasta
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 tsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery; sauté until softened (about 5 minutes). Stir in garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a gentle simmer. Add the whole chicken breasts; cover and simmer for about 15 minutes until fully cooked.
- Remove the chicken from the pot. Stir in orzo and cook according to package instructions (about 8-10 minutes).
- While the orzo cooks, shred the chicken using two forks. Return shredded chicken to the pot.
- Stir in fresh thyme, parsley, lemon juice, salt, and pepper. Adjust seasonings as desired.
