  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery; sauté until softened (about 5 minutes). Stir in garlic and cook for an additional minute.
  2. Pour in the chicken broth and bring to a gentle simmer. Add the whole chicken breasts; cover and simmer for about 15 minutes until fully cooked.
  3. Remove the chicken from the pot. Stir in orzo and cook according to package instructions (about 8-10 minutes).
  4. While the orzo cooks, shred the chicken using two forks. Return shredded chicken to the pot.
  5. Stir in fresh thyme, parsley, lemon juice, salt, and pepper. Adjust seasonings as desired.
  6. Serve hot, garnished with additional herbs if desired.
