  • 1 lb lean ground beef
  • 1 cup fresh breadcrumbs
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 can (28 oz) whole tomatoes
  • 6 cups low-sodium chicken broth
  • 8 oz thin spaghetti or broken regular spaghetti
  • 1 cup chopped onions
  • 1 cup fresh basil leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, garlic, salt, and pepper. Form into meatballs (1 inch in diameter).
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides; remove and set aside.
  3. In the same pot, sauté onions until translucent. Add crushed tomatoes and chicken broth; bring to a simmer.
  4. Return meatballs to the pot and simmer for 20 minutes.
  5. Stir in spaghetti during the last 10 minutes of cooking until tender.
  6. Add chopped basil just before serving.
